Ingredients

Adjust Servings:
1 bag; 12 ounces Vegan Pasta I chose Elicoidali Pasta (a large tube pasta)
1/2 cup Sun-Dried Tomatoes
1 cup Organic Vegetable Broth
1 cup Unsweetened Unflavored Almond Milk or any plant milk of your choice
3 cloves, minced Garlic
1/2 cup diced Red Onion
I can, drained Fire-Roasted Tomatoes
3 cups Fresh Spinach
1 teaspoon Red Pepper Flakes add less at first if you are sensitive to spice and adda little more to our desired taste
1/2 teaspoon Garlic Powder

Pasta is one of our favorite “go to” meals in the winter. I think it has something to do with “comfort food” of course, as well as the possible varieties.

Last night, I decided to make a creamy, sun-dried tomato sauce. Although I love marinara, I wanted to make something more light and creamy with soft tomato undertones, rather than a thick, hearty marinara.

To avoid fat, I buy the de-hydrated sun-dried tomatoes instead of the ones soaking in oil. You can find them in the produce section of the grocery store by other dried fruits and nuts.

This recipe is so easy, it literally took me the 12 minute noodle cooking time to prepare this entire dish. So, if you are in a hurry, and want a easy pasta dish, this recipe is for you.

Prepare the sun-dried tomato puree

In a one cup blender, combine sun-dried tomatoes, vegetable broth and plant milk.
Let sit for a few minutes while you dice the onions and garlic.
The sun-dried tomatoes will rehydrate as they sit in the vegetable broth/non-dairy milk.

Saute Onions and Garlic/Prepare Puree

Sauté onions and garlic until translucent; about 7 minutes.
Add drained fire roasted tomatoes, garlic powder, and red pepper flakes.
Blend sun-dried tomato/vegetable broth/non-dairy milk n high until smooth.
Add to tomato, onion, garlic mixture.
Stir and simmer.

Prepare Pasta

Prepare pasta according to directions.
While past is cooking, add fresh spinach to simmering tomato mixture.
It take a few minutes for it to wilt and become part of the sauce.
Stir until combined.

Serve

Drain pasta in a colander.
Add pasta to sun-dried tomato sauce.
Toss and serve.
