5 large leaves Kale stem removed, chopped
12 ounces Orecchiette Pasta or any vegan pasta of choice
optional on the side Sriracha

When it snows and sleets in October, it is time for some comfort food with a little love and spice. Mac and cheese is one of our favorite meals, and I make ‘Vegan Cheese’ a variety of ways. Today, I thought I would try to make a curry cheese sauce without using coconut milk or even dairy free milk. I had an idea; I just had to figure out if it would work, and lucky for me it did.

Use this link Vegan Butternut Squash Currie Sauce….Creamy and Delicious, to make the curry sauce. It also can be made in advance. It will last a week refrigerated.

Vegan Butternut Squash Curry Sauce (See link in Directions)

Using a 9x13 inch glass pan
Add 1/4 cup of water to the pan
Place both sides of the squash cut side down in the water
Cover with aluminum foil
When squash is cool enough to remove from the shell, use a spoon, and scrape it all into a high speed blender.
Add 1 cup Vegetable broth
Add 1/2 cup Nutritional Yeast
Add Curry Paste

Prepare the kale by removing the stems and chop into bite sized pieces
Rinse in a colander
Set Aside

Cook pasta according to directions
5 minutes before pasta is done, in a second sauce pan, add 1/8 cup water and boil water
Add chopped kale, stir and cover to steam
After 5 minutes, remove from heat and drain any remaining water; put aside

Drain Pasta and rinse
Return pasta to pan
Add Kale
Add 2 cups Butternut Currie Sauce
Stir and serve
Serve with Sriracha on the side for those who like it extra spicy
