2 cups Organic Spinach
2 cups, chopped Romaine Lettuce
1/2 medium, sliced Red Onion
3/4 cup; divided on two salads Shredded Carrots
1 cup; divided on two salads Mame
1 cup; divided on two salads Mandarin Oranges
6 slices, chopped Grilled Teriyaki Tofu See Grilled Teriyaki Tofu Panini Recipe
Oil-Free Dressing
1/2 cup Rice Vinegar
1/4 cup Teriyaki Sauce

    Last night, I made an incredible Grilled Teriyaki Tofu Panini Wrap. Luckily, we had left over tofu for lunch today. After a two hour work out at the gym, Paul and I were starving; little did he know, I made plans for lunch last night.

    My husband, although loyally plant-based (he hates the ‘vegan’ word), still worries about his protein intake regardless of his knowledge on the topic. In an effort to appease him, I decided to make a ‘plant-based,’ protein filled lunch, with only vegetables of course.

    I chose the same asian theme, since the teriyaki sauce tofu was the highlight of the meal. I chose to use spinach and romaine lettuce. Spinach and romaine have different textures and absorb dressing differently. Combining to two provides a meatier texture.  I used everything from the panini last night, but I added mandarin oranges and an oil-free dressing.

    Steps

    Prepare Dressing

    Combine oil-free teriyaki sauce and rice vinegar.
    Shake.
    Place in refrigerator.

    Salad

    Chopped Romaine lettuce.
    Combine romaine lettuce and organic spinach.
    Divide between 2 plates.
    Slice onions, and tofu.
    Add shredded carrots, onions, mame, and sliced tofu.
    Add mandarin orange slices.
    Shake dressing, and dress salads.
    Serve.
