Ingredients

Adjust Servings:
3 small, skin on, cut into equal pieces Baking Potato I used Idaho potatoes
3 large, cut into similar size as potatoes Carrots
1/2 cup Nutritional Yeast
1 Tablespoon Lemon juice
1 teaspoon Onion Powder
1 teaspoon Garlic Powder
1 Tablespoon Paprika
1 cup Organic Vegetable Broth
1 Tablespoon Tamari, Liquid Aminos, or Soy Sauce
1/2 cup Water
2 plus 1 teaspoon sauce SEE NOTE Adobo Chili Peppers 2 adobo peppers + 1 teaspoon sauce is for spicy. If you want ti less spicy, start with one, blend, and add more according to your tastes.
Balsamic Carmleized Onions
Cut into think slivers White Onion
4 Tablespoons Balsamic Vinegar
Pasta
1 bag/box; or ANY pasta of choice Penne Pasta

Mac and Cheese isn’t just for kids. We all love comfort food, and the creamier the sauce the better. What’s better than a piping hot bowl of mac and cheese? A piping hot bowl of chipotle mac and cheese with sweet carmelized  onions to take a little heat off.

Chipotles, or smoked jalepeño peppers in adobo, are used as marinade, sauce or seasoning in many Spanish dishes.

The beauty of this recipe is the cheese sauce is made purely from vegetables, and you can choose your level of spice simply and easily. Some people, like Paul and I, love it hot. Others prefer just a little flavor without the heat.

In order to please the whole family, a simple trick is to divide the sauce. You can make half for the kids with just cheesy sauce without the spice, and use the other half and quickly transform it to your own ‘adult’ taste buds. It’s versatile and simple.

My son prefers no onions; no problem.  Like the chipotle, balsamic onions can be added to the top or mixed in, or even deleted completely from one dish. The balsamic onions add a sweet taste to the dish, which adds a unique flavor and cools off the heat from the adobo pepper. Its a beautiful combination of flavors.

Without a doubt, this is one of our favorite dishes.  Chipotle Mac and Cheese tastes like the real deal. Give it a try. You may discover that decadence you crave.

'Cheese" Sauce

Scrub the outside of potatoes and carrots.
The skin may be left on.
Cut the potatoes and carrots into equal chunk size pieces.
Place in a large pot, an cover with water.
Boil uncovered for 30 minutes or until potatoes and carrots are fork tender.
Drain in a colander and let cool slightly, so they can be handled.

Making the Sauce

In a high speed blender add:
Vegetable broth, nutritional yeast, lemon juice, onion powder, garlic powder, and soy sauce.
Add potatoes and carrots.
Top with water.
DO NOT ADD ADOBO YET!
Blend on high until smooth.
If it is too thick, add more veggie broth and blend. (the size of potatoes and carrots may require you add more liquid to make creamy). Add liquid until it is creamy.
Now, divide the sauce if you are making different versions for different family members.
Start with 1 adobo pepper from the can and put it in the blender with the sauce you plan to add chipotle to.
Blend thoroughly.
Taste.
Like it hotter? Add one more and a little sauce.
You need to adjust to your taste buds.

Balsamic Caramelized Onions

In a non-stick skills on medium heat, salute onion strips until translucent.
Add 4 Tablespoons balsamic vinegar.
Stir with a wooden spoon.
Cook until all balsamic vinegar dissipates.
Remove from heat.

Preparing the dish

Transfer Sauce to a sauce pan, and heat on medium low while preparing the pasta.
Cook onions according to directions and set aside.
Cook your noodles according to the directions. I chose wheat penne pasta, but you may use any pasta you choose. Gluten-free pasta works just as well.
Drain pasta in a collander, and rinse with water; shake to release excess water.
Put pasta back into the pan you cooked the pasta in, and pour the cheese sauce over the top.
Mix together and place in individual bowls.
Add caramelized onions to the top, or you can mix them in if you choose that option.
Serve.
