Ingredients

Adjust Servings:
1 large head Cauliflower Remove stem and core. Cut into bite sized pieces
Breading Mixture
1 cup Panko Bread Crumbs I used regular but any flavor will work
1 teaspoon Cayenne Pepper
2 Tablespoons Nutritional Yeast
1 teaspoon Salt
1 teaspoon Pepper
Wet Mixture
1 cup Unsweetened Unflavored Almond Milk or any non-dairy milk; you can also use vegetable broth if you do not use non-dairy milk
1, juiced Lime
of 1 lime Lime Zest
4 Tablespoons Wheat Flour
Additional Ingredients
1 bottle Vegan Buffalo Sauce Choose your favorite non-fat vegan buffalo sauce
1/2 head, shredded Romaine Lettuce
1 large, sliced Hot House Tomato diced if making tacos
1 large, sliced White Onion diced for tacos
Vegan Bleu Cheese Sauce
1/2 cup Low-Fat Vegenaise or Silken Tofu
1/2 block Extra-firm tofu pressed and crumbled
1 clove, minced Garlic
1/2 teaspoon Pure Maple Syrup
3 Tablespoons Lemon juice
2 teaspoons White Miso Paste
2 teaspoons Apple Cider Vinegar
2 Tablespoons Tahini
2 Tablespoons, chopped Italian Parsley
Bread
6, sliced and toasted Vegan Ciabatta Bun or flour tortillas if making tacos

Cauliflower makes the perfect meat substitute for almost every dish. Unfortunately, many people skip cauliflower in their diets. Lately, though, cauliflower’s popularity  has spiked as more people attempt to add it to their diets as a carbohydrate reducer.  Instead of eating mashed potatoes or rice, the food industry pushed cauliflower as a carbohydrate replacement for weight loss.

Although cauliflower may double as a mashed potato or transform into rice, cauliflower possesses its own nutritional benefits. In fact, the nutrients in cauliflower actually decrease instances of several types of cancer. It also aids in digestion, improves memory, and strengthens bones. Cauliflower is also known to reduce inflammation.

My family loves cauliflower steaks, orange cauliflower, and buffalo cauliflower bites. I decided to borrow my buffalo cauliflower bite recipe and make a buffalo cauliflower sandwich with bleu cheese sauce.  I also use this recipe for Buffalo Cauliflower Tacos. I still keep the components of the taco:tortilla, tomato, onion, and lettuce,but I add the buffalo cauliflower and the bleu cheese sauce instead of salsa. You choose. The beauty of this recipe is you can easily turn it into your favorite dish.

Our kids love buffalo cauliflower. Since they were coming to dinner, I decided to prepare their  favorite appetizer and make it a meal.

Vegan Bleu Cheese Dressing

First, using a tofu press, press tofu slowly until it is completely free of moisture. You will need 1/4 of the block of tofu for this sauce. (Save the rest for a different recipe)
Take 1/4 block of extra firm tofu (dry) and place it in a bowl. Using a fork, crumble the tofu into small pieces
In a blender (I used a cup size), combine the following ingredients:
½ cup Low Fat Vegenaise or silken tofu
1 garlic clove
½ teaspoon maple syrup
3 tablespoons lemon juice
2 teaspoons white miso paste
2 teaspoons apple cider vinegar
2 tablespoons tahini
¼ teaspoon sea salt
2 tablespoons finely chopped fresh parsley
Combine the liquid dressing with the crumbled tofu. Refrigerate.

Cauliflower

Remove core and outer leaves from cauliflower.
Cut into larger sized pieces the size of your ciabatta bun, or in bite sized pieces if making tacos.
Rinse with water.

Prepare breading and 'milk wash

Combine cornmeal, panko bread crumbs,cayenne, nutritional yeast, salt and pepper in a deep pyrex dish
In a second pyrex dish, whisk together milk and flour (or arrow root), lime juice and zest (you need to thicken it a bit to use as a wash)

Baking

Preheat oven to 400 degrees.Using a silicon mat or parchment paper, line a cookie sheet
Start with the liquid wash, and dip each piece of cauliflower in the milk mixture, then the bread crumb mixture. Be sure to cover each piece, pushing the cauliflower into the bread mixture on both side; then place on the cookie sheet in a single layer.
Continue until all cauliflower is covered and on the cookie sheet.
Cook for 30 minutes on the middle rack in the oven.

Buffalo Toss/Assembly of Sandwich/Tacos

After cauliflower is cooked, place it in a large bowl and toss with buffalo sauce.
The amount you choose is up to you.
Toss gently.
Return to cookie sheet and cook for another 7 minutes.
Place buffalo cauliflower on a toasted ciabatta bun or on a flour tortilla or wrap
Add some vegan bleu cheese
Top with lettuce tomatoes and onions
