Adjust Servings:
2 cups Red Lentils You may also use yellow lentils
1 large, diced White Onion
3 cloves, minced Garlic
3 teaspoons Cumin
2 teaspoons Turmeric
8 cups Organic Vegetable Broth
1/4 cup Lemon juice Reserve until blending
for garnish Parsley
1 wedge per cup Lemon

When I first started eating a plant based diet, I experienced a lot of stomach discomfort and digestion issues. I discovered Kombu, a seaweed vegetable, which literally saved my stomach. After reading an article by Dr. Campbell, I learned people need to introduce lentils into their diets in small amounts. In time, digestion and other discomfort dissipates.

I use lentils a lot in my cooking because of the nutritional value.  With tons of fiber, protein, minerals and vitamins, lentils are still low in calories and contains virtually no fat. One cup of cooked lentils only contains about 230 calories but still leaves you feeling full and satisfied.

Paul and I enjoy an array of Mediterranean foods.  La Marsa, a restaurant near our home, serves several vegan dishes, but  most dishes contain a huge amount of oil, unless of course I request no oil. Unfortunately, one of our favorite soups, crushed lentil soup, is made in large quantities in advance and contains oil, so I just make it at home. Luckily, ever other entree we order is prepared fresh and oil-free. Needless to say, we are regulars.

This soup is so easy to make, it is almost too simple to pass up. You literally throw all 6 of the 7 ingredients in a crock pot and walk away. When fully cooked, blend in a high speed blender with the lemon juice, and serve.

Crushed Lentil Soup , easily made without any oil,  literally takes 10 minutes to prepare . I cooked my soup in the crock pot, but the stove top works just as well. If you choose to use the stove, put all ingredients in a soup pot. Bring to a boil, cover and reduce to simmer. Cook covered for 1 hour. Add lemon juice and blend in a high speed blender.

Paul likes it a little spicy, so I draw a little heart in the bowl with Sriracha. Use lemon as a garnish and add chopped parsley. We enjoy dipping vegan naan in our soup too.

Prepare Ingredients

Measure ingredients
Rinse lentils and pick out any brown lentils
Place all ingredients except lemon juice in the crock pot
Cover and cook for 4-6 hours on high or 6-8 hours on low
When time elapses, blend soup in a high speed blender in smaller portions
Add lemon juice last
Add more cumin or turmeric to your tasting preference
Serve with a lemon wedge and parsley, or add roasted chick peas as a garnish or a Sriracha heart
