3 cans, rinsed and drained Dark Red Kidney Beans
3 cans Organic Tomato Sauce
8 ounces, diced Button Mushrooms
1 small, diced Red Onion
1 small, diced White Onion
1 vegan Chili Seasoning Packet
1 large, skin on, diced White sweet potato
4 stalks, chopped Celery
1, chopped Red Pepper
1, chopped Yellow pepper
1, deseed, deveined, diced Jalapeno

White sweet potatoes are a mild sweet combination with the spicy flavors it chili to make a hearty meal.

Recently, I found white sweet potatoes at my market. I have never seen a white sweet potato before, so I bought two potatoes with the intention of using them for something. I just didn’t know what I planned to do with them until I did a little research.

White sweet potatoes are less sweet and more starchy than orange sweet potatoes, but they don’t taste like regular white potatoes. I roasted one to check it out. A cooked white sweet potato is drier than an orange one, but with a more creamy taste. It is slightly sweet but not like a sweet potato. Instead, it is a slight sweet with a more mild taste. To me, it tasted a bit savory.

I decided to use the second one for a vegan chili with an array of vegetables. I bought 2 large white sweet potatoes, so I chopped up the remaining one as the highlight to the chili.

Instead of cooking on the stove, I opted for my crock pot because I prefer the flavors to brew slowly all day. I sued two different colored onions and garlic, which I sautéed first, in order to take advantage of the flavors.

Choose which ever vegetables you wish, but I chose onions, celery, red, yellow and jalapeño peppers. I used a dark red kidney beans for a meatier chili, and mushrooms as a meaty base.

Onions and Garlic

Saute onions and garlic in a non-stick skillet until translucent.
Add to the crock pot.


Add all ingredients to the crock pot

Add all diced vegetables to the crock pot.
Drain and rinse beans. Add them to the crockpot.
Add tomato sauce and chili packet.
Add organic vegetable broth.
Leave to cook, covered for 4-6 hours on high or 6-8 hours on low.
