4 Tablespoons Engine 2 Hummus or Hummus of Choice
1 handful per pita Arugula
12 sliced Grape Tomatoes
1,sliced thin Red Onion

Quick and easy lunches make life easier in our fast paced lives. One of our favorite quick go-to lunches are open-faced Mediterranean sandwiches.
A Michigan based company, Paramount, makes oil-free, fat-free pita bread and lavash. They also make a flat bread version which is perfect for pizzas. I used them to make open-faced sandwiches. When cut in half, they fit perfectly in the toaster, or they are just as good cold.
In order to fit everything on our agenda into our day, I made these sandwiches quickly before we left to do our shopping.
I either make my own hummus or we buy Engine Hummus because it doesn’t contain any oil or added fat. Add some other fresh vegetables, and you have a great lunch in under 5 minutes.
Note:If following a low-fat diet, omit Kalamata olives
