Ingredients

Adjust Servings:
Salad
1/2 small, sliced in thin ribbons, and cut in half Purple Cabbage
1/2 small, sliced in thin ribbons and cut in half Green or White Cabbage
1 small, cut in half and then sliced in small ribbons White Onion
1 large, shredded Carrot
Dressing
1/2 cup Apple Cider Vinegar
3 Tablespoons Dijon Mustard
1/3 cup Pure Maple Syrup

Simple Oil-Free Maple Dijon Slaw

Yesterday, I left my house at 5 a.m. for work and didn’t get home until 6 p.m. Yes, it was dark when I left and dark when I arrived home. Unfortunately, this occupational hazard comes with being a teacher.

I planned ahead; I already marinated tempeh for bbq sandwiches, so while Paul grilled I threw together some quick slaw for our sandwiches.

Subsequently, I always make slaw with purple and white cabbage to reap the most nutrients. The health benefits of cabbage include frequent use as a treatment for constipation, stomach ulcers,  and headaches. It also helps curb obesity, skin disorders, eczema, jaundice, scurvy, rheumatism, arthritis, gout, eye disorders, heart diseases, aging, and Alzheimer’s disease.

Inexpensive, cabbage makes a great additional to any meal. It just takes a few ingredients and a few minutes to make. The dressing is completely fat free. There is no added salt, and its gluten-free.

Salad

Chop vegetables accordingly.
Add to a large bowl.

Dressing

Add vinegar, mustard and maple syrup to a small bowl or large measuring cup.
Whisk all ingredients together.
Por over salad.
Toss.
Cover and place in refrigerator so the dressing melds with the salad.
