Ingredients

Adjust Servings:
1 pound; rinsed and picked over Dried Split Peas
1 large, diced White Onion
1, minced Shallot
4, diced Carrots
5 stalks, diced Celery
6 cups Organic Vegetable Broth
2 Bay Leaves Remove when soup is cooked
2 cloves, minced Garlic
1 teaspoon Red Pepper Flakes
1 teaspoon Salt
3 teaspoons Fresh Ground Pepper
2 teaspoons Garlic Powder
1 teaspoon Onion Powder

As part of Sunday food preparation, I always make a big pot of soup. Each week I try to vary the type I make,a although my family has favorites. This week, I chose to make split pea soup.

Although I sometimes make soup on the stove, I love the crock pot. I literally throw the ingredients in the pot, put the top on, and magically soup is made. I didn’t appreciate my crock pot until I had a house full of children and a full time job. Now, it is one of my favorite appliances. I actually own two; just in case I need to make two dishes at once. Crock pots are also great to take work or to a party.

Despite the simplicity of this soup, the flavors are intense. I add a couple different spices to give it the depth of flavor I am looking for. And, I cook it slow and long, so the peas absorb the flavors of the spices. I use vegetable broth instead of water, two bay leafs instead of one, and I use onions and shallots.

If you have ever experiences the blended flavors of shallots and onions, you understand my obsession. I also add a bunch of vegetables to give it extra nutritional benefit and taste.

The texture of pea soup is thick. Although it tastes thick, creamy, and fattening, it is anything but. In fact, the soup is filling and satisfying without any of the guilt.

In the crock pot bowl

Put dried peas in the bottom.
Add diced carrots, onions, shallot, celery, and spices.
Pour in 6 cups of vegetable broth
Add 2 bay leaves

Cook

Cook for 6-8 hours on low.
Stir after a few hours.
Remove bay leaves before serving.
