2 large Vegan Tortilla or Lavash Bread
1 container Engine 2 Hummus or Hummus of Choice
3 cups Fresh Spinach
1 cup Shredded Carrots
10 onions, chopped Green Onions

These easy hummus and vegetable spirals are a great, low-fat appetizer to take to a party, or fun to put in your child's lunch box or your own lunch box.

Instead of bringing a tub of hummus and some veggie to your next party, try something a little more creative?  A simple tortilla or lavash bread is the perfect canvas for making individual spiral sandwiches.

I used spinach, carrots, and green onions, but you can choose your favorite veggies. I like to choose vegetables with diverse colors to make the spirals colorful.

My kids loved these sandwiches in their lunch boxes, and I must admit, I have taken them for lunch myself.

Preparing the Spirals

Using a knife or spreader, spread a thin layer of hummus all over the tortilla or lavash.
It is very important to cover the edges (be heavier on the edges).
Cover half the tortilla with spinach.
Then add carrots on top of the spinach, and then the onions.

Rolling

Tightly roll the tortilla, making sure the vegetables are tucked in as you roll.
Roll toward the half with just hummus.
You may need a little more hummus when you get the the end of the tortilla.
